Ingredients

1 ½ cupsShredded coconut, (Ceres or Pams are preservative-free), plus extra for coating (Main)
1 cupGround almonds (Main)
4 TbspCoconut oil, melted
1 TbspFreeze-dried raspberry powder, I used Fresh As, use more/less to taste
1Lemon, zested
1 servingDark chocolate, melted, optional

Directions

  1. Line a shallow baking dish with baking paper.
  2. Mix all ingredients (except chocolate if using) and press into tray.
  3. Cut in to squares and refrigerate or freeze to set. Store in fridge or freezer.
